There are a few major fast food seafood franchises that are QSR concepts, but seafood does not lend itself well to the traditional QSR model. This is because preparation and service times are longer than at a typical burger place. As a result, full-service seafood concepts are more common. A full-service restaurant means more square footage. It follows that real estate costs will be higher. Even the QSR brands typically use freestanding buildings, which can be expensive in terms of buildout and site costs.
Inventory management can be challenging in the seafood segment as well. Fish and shellfish are highly perishable items, and a significant portion of their shelf life can be lost in the transportation process, depending on how far they must travel. This also means suppliers have to deliver more frequently, in many cases daily. The alternative is frozen product, but outside of QSR brands that is not a desirable choice.
The upside is that because of these factors, seafood tends to command premium prices. Plus, since all seafood franchise restaurants are subject to the same inventory constraints, there is little competition on price.
The Price Of Full Service
Full-service restaurants are not cheap to build out, so costs in the seafood franchise category are correspondingly higher. The least expensive tend to be in the $300,000 to $600,000 range. This is for concepts that are smaller casual dining units that can be located in-line in a shopping center. Larger and freestanding restaurants can easily have startup costs from $1.5 million to $2 million on the high end.
