Edmund Woo’s second goal was to make SASKATOON® a concept that was also highly satisfying for the restaurant operator, one that would not fully consume the owners’ and managers’ lives, like so many restaurant concepts. He created SASKATOON® as a dinner-only concept, requiring the operator to be open fewer hours. He designed the concept to be operated with lower overhead and lower rents. And he created a menu with unique offerings, from Elk Tenderloin to Kangaroo Steak to Pecan-crusted Salmon, that created both word-of-mouth advertising and unforgettable experiences. Appetizer specials may include wild boar with peppercorn or hickory-grilled Emu. Dinner special entrees feature unique delicacies like succulent hickory grilled Elk tenderloin, herb-roasted Pheasant, or hand-carved Kangaroo Steak, finished with an orange demi-glaze. Widespread appeal. For those in the mood for something less-exotic, the SASKATOON® menu features a wide range of American favorites, including Sizzlin’ Rainbow Trout, Campfire Chicken, Pork Tenderloin and aged, hand-carved beefsteaks, served with a wide range of salads, potatoes, soups and vegetables. Site Flexibility. SASKATOON® restaurants can be adapted for a variety of sites, configurations and locations, including freestanding, strip centers, enclosed malls and airports. The flexibility of the SASKATOON® concept enables us to capitalize on non-traditional and less expensive sites in urban, small town and tourist locations. Limited Hours. SASKATOON® restaurants are focused on the dinner daypart, operating seven days a week from 5:00 pm to 10:00 pm weekdays, and closing on Saturdays at 11:00 pm and Sundays at 9:00 pm. (Hours may vary by location and season). This focus on fewer, more intense hours is designed to provide a number of cost and labor efficiencies, and other advantages. Corporate Marketing Programs.
